Shafer Red Shoulder Ranch Chardonnay
Shafer has long been leaders in sustainable agriculture and environmentally-friendly practices, and were the first winery in the world to rely solely on solar energy. Their Chardonnay strikes a nice balance between European and Californian styles. A restrained use of oak, the absence of malolactic fermentation and use of natural yeast work together to let the pure, cool climate Carneros fruit shine through. Defaix Chablis Vaillons
This is a rare opportunity to try one of the coolest things in wine—properly-aged Chablis. This wine comes to us directly from the Domaine, and is at that point in its life where it shows layers of mineral and complexity that is hidden in its youth. The Defaix family has been making wine in Chablis for 250 years and own land in three Chablis Premier Cru vineyards: Vaillons, Les Lys, and Cote de Lechet where the vines average 38 years of age. They only use natural yeasts, and the elevage takes place for 18 months in stainless steel, with monthly stirring of the lees.
